Let them eat cake?

May 30, 2008

IMG_0167Cher Amis,

This is not exactly what I wanted Scarlett's birthday cake to look like.  It is a bit . . . crumbled.  You know things aren't working out quite perfectly when only half or one third of the homemade devils food wonder exits the baking pan despite proper buttering and flouring. Hmm.  Scarlett, being my sweet, understanding future diplomat, mused with her mom on how to solve this culinary debacle. Pippin (mind you it is not his birthday) was beside himself.  Stay tuned.  We found a solution if a trifle unexpected 🙂

Did you wait 10 minutes before turning them out of the pan? Trying to take them out too early will cause this problem. But so will waiting until they’re almost cool. 10 minutes is the magic amount of time. Plus, I always cut a round of parchment paper the size of the pan. Butter pan, place parchment in the bottom, butter parchment, flour all. Voila! Comes out perfectly every time.
